20 mins prepServes 8
A special yet manageable dinner for entertaining, featuring crispy pork belly, creamy mashed potatoes, and a rich apple cider gravy. Most of the cooking is done in the oven, leaving you free to enjoy time with guests.
Preheat the oven to 285°F. Season the pork belly with salt, pepper, garlic powder and smoked paprika. Add the pork belly to a dutch oven with the chicken broth and apple cider. Cover and bake for 2½ hours, or until very tender. Remove the pork belly from the cooking liquid and pat dry. Reserve 1 cup of the cooking liquid for the gravy. Air fry the pork belly at 425°F for 8 to 10 minutes, flipping halfway through, until golden and crispy. For the gravy, melt the butter in a saucepan over medium heat. Whisk in the flour and cook for about 1 minute. Slowly whisk in the reserved cooking liquid and apple cider. Simmer until thickened, then season with salt and pepper to taste. Spoon mashed potatoes onto each plate, top with the crispy pork belly and finish with plenty of apple cider gravy. Enjoy!
