Lemon Chicken Orzo Soup

1. Heat olive oil in a large pot over medium heat. Add onion and carrots and sauté for about 5 minutes until softened.
2. Add garlic and cook for another 30 seconds until fragrant.
3. Stir in the lemon zest, salt, pepper, dill, and flour. Cook for 1 minute, stirring so the flour coats the vegetables.
4. Pour in the chicken broth and stir well to combine.
5. Add the chicken thighs and orzo. Bring to a gentle simmer and cook for 15–18 minutes, until the chicken is cooked through and the orzo is tender.
6. Remove the chicken, shred it with two forks, then return it to the pot.
7. Stir in the lemon juice, taste, and adjust seasoning if needed. Serve warm.
