Grilled Scallop Tostadas

Begin by prepping all of your fresh produce per the ingredients list.

Once your workspace is organized with all of the fresh ingredients, clean the scallops by removing the tough mussel on the side (some scallops do not have this.) Pat them dry.

Drizzle the scallops with olive oil. Salt and pepper on both sides.

Grill them for 2-3 minutes on each side. Set aside when done.

Add salt to your mashed avocado. Spread the avocado onto each of your tostadas.

Place three scallops on the tostada.

Top with corn, cilantro, tomato, and red onion.

Top with lime juice.

Top with cheese.

Serve and enjoy!
